Amazake Marinated Roast Beef

Amazake enhances a umami flavor of meet and softens meet.

You have never had that tender roast beef that disappear in your mouth.



Ingredients

14 oz. beef roast (eye of round roast, top round roast, or top sirloin roast)
2 tsp. salt 
1 pinch. black pepper 
4 tbsp. amazake 
1 bay leaf 

Materials

Silicone bag or plastic bag
Pan
Pot
Bath towel
  1. In a silicone bag/a plastic bag, mix together salt, black pepper, and amazake.

  2. Put beef roast into a silicone bag/a plastic bag with the mixture you made in 1 step.

  3. Massage them well by hand.

  4. Marinate them overnight in the fridge(I like to marinate for 2 days to have more aged flavor).

  5. Take out the marinated beef roast from the fridge and rest it for 1 hour in a room temperature.

  6. After removing excess amazake mixture on the beef roast, sear all sides of the marinated beef roast over high heat in a pan until it gets nice brown color to it but not overcook inside.

  7. While waiting for the beef roast to cool down, bring water to a boil in a pot till it reaches to between 158 °F to 167 °F.

  8. To place the seared beef roast in boiled water, put back it in a clean plastic bag or silicone bag and seal them tightly. (If you are worried leaking water inside, you can layer 2 plastic bags)

  9. Remove the pot from a stove and dunk the seared beef roast sealed in a bag to a pot.

  10. Cover the pot with a bath towel and leave it for 1 hour.

  11. Take the beef roast and rest in room temperature.

  12. Slice as you like and drizzle your sauce.
