Q. Is there alcohol in it?

A. Our amazake made with rice-koji does not contain alcohol at all. However, a different kind of amazake, made with sakekasu (sake lees), results in a drink with low levels of alcohol. At this time, we do not produce this type of amazake.

Q. Who can enjoy amazake?

A. Everyone of any age range from infants to elders over 100 years old!

Q. Why does each amazake taste different?

A. I handcraft each and every batch. I naturally ferment amazake and the result of the fermentation process can bring subtle surprises.            

Q. My amazake started to become sour. Is it still safe to consume?

A. It's still consumable, but won't be quite as tasty. As an alternative to direct consumption, you can also still use the amazake as a cooking or baking ingredient to add flavor. The reason why it becomes sour is that our amazake is neither pasteurized nor preserved with chemicals, which means that fermentation can and will slowly continue in the refrigerator. Due to the ongoing fermentation, lactose bacteria in amazake are increased and contribute to the rising sour taste. 

Q. Where should I keep amazake?

A. Definitely in the fridge! You can freeze amazake in the freezer if you would like, which extends the expiration date of amazake from 5 days to 1 - 2 months. Just be careful with the breakable glass jar when you keep them in the freezer. 

Q. How much amazake should I drink per day?

A. It depends on your condition and health. However, a general recommendation is 100ml to 200ml per day.
